Pesto Pine Nut Pasta Recipe

Cook Time: 25 Minutes | Serves: 4

Ingredients

  • Farfalle pasta (half a bag)
  • Jar of green basil pesto
  • Bag of pine nuts
  • Bag of spinach
  • Fresh flat leaf parsley
  • Olive oil

Method

Fill a kettle to the brim with cold water and start the water boiling process by pushing the button on the kettle. Add pasta to a large pan, then add 3/4 of the boiling water. Cook the pasta in the large pan until its just slightly under cooked. You can add a splash of olive oil to the boiling pasta water to give the pasta some additional Italian magic.

While the pasta is cooking, chop the spinach, then add it to a colander, pour over the remaining boiling water and set aside. Add the pine nuts to a large pan over a medium heat. Keep the pine nuts moving around the pan until they get toasted on all sides. Decant the toasted pine nuts into a vessel of some kind. Put the pan in sink ready for washing later.

Add the jar of pesto, pine nuts and spinach to the now cooked pasta along with and stir until the pasta turns green.  Add some chopped parsley and a further sprinkle of olive oil to the pasta for additional Italian magic. Season with salt and pepper to taste.
